Nutty-Veggie Salad

The tantalizing flavor of this nutty-crunchy salad is a sure hit at all meals. Prepared fresh just before serving helps maintain the nutrition in it.

Ingredients

  • 1 Cup Finely Chopped Walnuts
  • 1/2 Cup Toasted Sesame seeds
  • 3/4 tspn. White Pepper Powder
  • Salt to taste (optional)
  • 1 Cup Finely Chopped Tomato
  • 1 Cup Shredded Spinach Leaves
  • 1 Cup Finely Grated Red Beets
  • 1 Cup Finely Chopped Cucumber
  • 3/4 Cup Roughly Chopped Red Onion
  • Juice of 1-2 Lemons
  • 1 Cup Finely Grated Carrots
  • 1/4 Cup Chopped Mint Leaves

Preparation

 1) Mix Cucumber, Tomatoes, Red Onions, Carrots and Spinach Leaves.

  2) Lightly toss and add Lemon Juice, Salt (optional) and Whilte Pepper powder.

3) Add the Walnuts and Sesame Seeds and mix lightly.

4) Garnish with Mint leaves and Red Beets.

5) Serve fresh.

(Only mix in the nuts right before serving. Save any extras in the fridge, unmixed.)
