Spinach Rice Casserole
Ingredients

cooked brown rice, 4 c.

butter, 3 T.

eggs, 4 beaten

milk, 1 c.

cheddar, 1.5 c. shredded

tamari, 2 T.

salt, 1/2 t.

nutmeg to taste

cayenne to taste

sunflower seeds, 1/4 c.

paprika

onion, 1 c. chopped

spinach, 2 lbs

parsley, 1/4 c.

garlic, 2 cloves minced
Preparation
- Sauté onions and garlic with salt and butter. When onions are soft, add spinach. Cook about two minutes.
- Combine with all ingredients except sunflower seeds and paprika. Spread into buttered casserole dish and sprinkle sunflower seeds and paprika on top.
- Bake covered 35 minutes at 350 degrees.
