Spinach Rice Casserole

Ingredients

  • cooked brown rice, 4 c.
  • butter, 3 T.
  • eggs, 4 beaten
  • milk, 1 c.
  • cheddar, 1.5 c. shredded
  • tamari, 2 T.
  • salt, 1/2 t.
  • nutmeg to taste
  • cayenne to taste
  • sunflower seeds, 1/4 c.
  • paprika
  • onion, 1 c. chopped
  • spinach, 2 lbs
  • parsley, 1/4 c.
  • garlic, 2 cloves minced

Preparation

  1. Sauté onions and garlic with salt and butter. When onions are soft, add spinach. Cook about two minutes.
  2. Combine with all ingredients except sunflower seeds and paprika. Spread into buttered casserole dish and sprinkle sunflower seeds and paprika on top.
  3. Bake covered 35 minutes at 350 degrees.
