Lentil Salad with Curried Citrus Dressing

Ingredients

  • lentils, 1 c. dry
  • salt, 1 t.
  • 2/3 c. curried citrus dressing*
  • carrots, 1/2 c. shredded
  • tomatoes, 2
  • oranges, 1 1/2 c.
  • red onion, 1/2 c. diced

Preparation

  1. Place lentils in strainer to rinse. In large sauce pot combine 1 quart water and salt. Add lentils. Bring to boil and simmer uncovered over medium heat until lentils are tender (12-15 min.) Drain, add onion and carrots. Add 1/3 cup dressing*, toss, cover
  2. *Curried Citrus Dressing for lentil salad
  3. ¼ cup orange juice 1 tbs curry powder 1 tsp salt ¼ tsp ground white pepper 1 tbs cider vinegar 3 tbs olive oil
  4. Stir orange juice, curry, salt, pepper and vinegar. Whisk in olive oil until dressing is slightly thickened.
