Black Beans and Rice

Black beans and rice! So good. I use canned black beans, fire-roasted tomatoes, onion, fresh garlic, and chile pepper. Serve it over brown rice with a big salad.

Ingredients

  • 1 can black beans, or about 2 c. cooked black beans
  • cayenne pepper
  • cooked brown rice
  • onion
  • bell pepper
  • fire-roasted tomatoes (canned) or roast your own!
  • tomato
  • garlic
  • lettuce
  • sprouts

Preparation

Chop and saute the onion and garlic until translucent, then throw in the chopped or canned tomatoes. Add salt and cayenne to taste, mix in the rinsed beans, and heat through. Serve over cooked brown rice with a tossed salad on the side.
