Stirfry with Peanut Sauce

Versatile and yummy.

Ingredients

  • 1 1/2 c. creamy peanut butter
  • 1/2 c. coconut milk
  • 3 T. water
  • 3 T. soy sauce or tamari
  • 1 T. hot sauce
  • whole wheat fettucine or buckwheat noodles
  • broccoli
  • 3 cloves garlic, minced
  • 1 T. fresh ginger root, minced
  • 1/4 c. chopped cilantro
  • 3 T. fresh lime juice
  • red bell peppers

Preparation

  1. In a bowl, mix the peanut butter, coconut milk, water, lime juice, soy sauce, hot sauce, ginger, and garlic. Mix in the cilantro just before serving.
  2. Either pour this over buckwheat (or whatever you like) noodles with stir-fried veggies (we use broccoli and red bell pepper). This is a good place to throw in any unused veggies you have in your crisper.
