Stirfry with Peanut Sauce
Versatile and yummy.
Ingredients
- 1 1/2 c. creamy peanut butter
- 1/2 c. coconut milk
- 3 T. water
- 3 T. soy sauce or tamari
- 1 T. hot sauce
- whole wheat fettucine or buckwheat noodles
- broccoli
- 3 cloves garlic, minced
- 1 T. fresh ginger root, minced
- 1/4 c. chopped cilantro
- 3 T. fresh lime juice
- red bell peppers
Preparation
- In a bowl, mix the peanut butter, coconut milk, water, lime juice, soy sauce, hot sauce, ginger, and garlic. Mix in the cilantro just before serving.
- Either pour this over buckwheat (or whatever you like) noodles with stir-fried veggies (we use broccoli and red bell pepper). This is a good place to throw in any unused veggies you have in your crisper.
