Poulet Saute a la Creme (chicken with cream sauce)
This easy and delightful dish is quick to throw together and very delicious. A sprinkle of parsley at the end brightens and freshens the dish, and makes it perfect for an impromptu dinner with friends. Lovely served with rice and salad.
Ingredients
- brown rice (optional)
- chicken breast, 1-2 lbs
- butter, 2 T.
- cream, 1 c.
- olive oil, 2 T.
- dry white wine, 1 c.
- salt/pepper to taste
- spinach
- parsley
- lettuce
- cauliflower (optional) or brown rice
Preparation
Saute chicken in butter and oil until browned. Cover, and simmer on low until tender. Remove from pan.
Add 1/2 c. dry white wine to pan, and simmer until reduced to 2 tablespoons.
Add cream, reduce until thickened.
Season with salt and pepper, pour over chicken, sprinkle with chopped parsley.
*I usually serve this with steamed spinach and wild rice or brown rice. You can also "rice" uncooked cauliflower in the food processor and then steam it to serve in place of rice.
