Deep Dish Tuna Pot Pie
This can be a meal made from leftovers, turned into a hot, crusty dish of comfort food heaven!
Ingredients
- tuna, cooked (or canned in water)
- milk, 1 c.
- flour, 1 1/4 c.
- salt, 1/2 t.
- unsalted butter, 1/2 c. (1 stick)
- ice water, 2-3 T.
- sugar, 1/2 t.
- onions
- potatoes
- carrots
- peas, 1 c.
Preparation
Mix flour, salt, and sugar together. Using a pastry cutter, cut in butter until it is the size of small peas. Add ice water 1/2 T. at a time, tossing lightly with a fork, until dough starts coming together. (Alternatively, you can use a food processor for all of this.) Form dough into a ball, and let it rest.
Chop potatoes, carrots, and onion, and simmer in the milk until tender. Add peas and tuna, and salt/pepper to taste, then transfer to a deep casserole dish.
Roll out pastry into the shape of your casserole, and lay it over the potato/tuna mixture, crimping the edges up against the casserole dish to seal. Cut some cute designs into the pastry to vent the steam, and bake in the oven at 400 until pastry is puffed and crusty, and filling is bubbling.
