Peanut Butter Stuffed Squash
This was devised by a friend of a friend, and is so simple, yet delicious!
Ingredients
- butter/oil
- brown sugar
- peanut butter
- onions
- garlic
- winter squash
Preparation
Cut squash in half and take out seeds.
In a pan put butter or olive oil, chopped onions, chopped garlic (not minced) and a bunch of brown sugar. Caramelize all of this a bit. Then add a huge scoop of peanut butter and let it melt together.
Poor this mixture into the 'squash bowls' to fill them right up and cover them in aluminum foil. Make stands for the bowls out of foil so they won't tip over. Bake at 400 until squash is soft on the side when pressed.
Eat all by itself, or with some crisp salad veggies on the side.
