Beef and Cabbage Casserole

The fast prep time on this dish, and the simple Irish flavors, make it a winner. Also note the "easy on the budget" ingredients.

Ingredients

  • 1 lb. ground beef
  • 1 c. milk
  • salt/pepper
  • 4 c. diced potatoes
  • 1 small cabbage

Preparation

  1. Shred cabbage, dice potatoes, and grease a large casserole pan. Put half the cabbage in the bottom, then layer with half the potatoes. Next, add 1/2 of the ground beef, evenly spread. Salt and pepper each layer lightly. Repeat the layers once more, ending with the ground beef.
  2. Bake, covered, at 350 for about 45-60 minutes, until beef is cooked and cabbage is tender.
  3. Alternatively, layer things up in the crock pot and let it cook on low 6-8 hours. (This option is so tender and easy and awesome!)
  4. Tastes great with a dollop of plain yogurt or sour cream.
