Tabouleh Salad

Mediterranean salad, with parsley and mint. Very satisfying, and a great accompaniment to many meals.

Ingredients

  • bulgur wheat, (or try quinoa!) cooked and cooled
  • 5 T. high quality olive oil
  • 1 onion, chopped finely
  • 1 c. chopped tomatoes
  • 3/4-1 c. chopped parsley
  • garlic (optional)
  • cucumber (optional)
  • 4-5 T. lemon juice
  • 1/2 c. chopped red pepper (if desired)
  • freshly chopped mint, about 1/2 c.

Preparation

Cook the grain, and let it cool. Chop the onion, parsley, mint, tomatoes, and red pepper. Combine all in a large bowl. Juice the lemons, and add the lemon juice and olive oil to the mixture. Mix it all up, and chill prior to serving.

 

Cucumber and garlic can be added if you have them on hand. Consider serving this with hummus and pita bread.
