Tortilla "sushi" rolls
These rolls are perfect for children who will not try real sushi. These can be made without the nori sheets and still taste great. You can also substitute any of the vegetables for your favorite sushi ingredients.
Ingredients
- 1 cup refried black beans (from scratch or store-bought)
- 4 sheets of nori, cut to size of the tortillas
- 4-5 small, whole-wheat tortillas
- 1 red pepper, cut into long, thin slices
- 1 medium carrot, thinly sliced
- 1/2 cucumber, cut into long, thin slices
Preparation
- 1. Spread the refried beans onto the tortillas, reserving half of the beans for later 2. Place a sheet of nori onto each tortilla 3. Spread the remaining half of the beans over the nori sheets 4. Lay 2 pieces of red pepper, 2 strips of carrot, and 2 piece
- Serve with a fresh salad or salsa for dipping.
