Ginger Garlic Bok Choy
Quick easy side dish - make it a main dish with the addition of tofu or chicken or shrimp.
Ingredients
- tofu, chicken, or shrimp (optional)
- red pepper flakes (optional)
- soy sauce
- vegetable oil
- sesame oil
- garlic
- ginger
- red pepper
- bok choy
Preparation
Clean and chop the bok choy, separating the leaves from the stalks. Chop the red pepper.
Heat the vegetable oil in a wok or frying pan on high. When the oil is very hot, add the bok choy stalks and red pepper pieces, and stirfry for about two minutes. Add two cloves minced garlic and a tablespoon of grated ginger. (Add the red pepper flakes if desired.)
When the veggies are becoming tender, add the bok choy leaves to wilt. Add a tablespoon of soy sauce and a few drops of toasted sesame oil.
To make this a complete meal, you can add firm cubed tofu at the end, to warm through. Or, put the bok choy into a serving dish, and use the hot pan to stirfry some shrimp or chicken in the juices/oils, and serve on top.
