Radishes with Sugar Snap Peas and Dill
This makes a great side dish, or a light, summer-y main dish.
Ingredients
- olive oil, 1 T.
- butter (or Earth Balance), 1 T.
- dill seeds, 1 t. (optional)
- fish, your family's favorite kind (optional)
- wild rice (optional)
- orange juice, 1/4 c. (or juice of one orange)
- sugar snap peas, 2 c.
- shallots, 1/2 c. sliced
- fresh dill, 1 T. chopped
- radishes, 1 large bunch
Preparation
In a large pan, saute the shallots in the oil and butter until tender.
Add sugar snap peas, saute for a minute or two, then add the radishes (cleaned VERY well, and quartered or sliced). Saute another 3-4 minutes, until tender, then add the orange juice to heat through. Add fresh dill and put it into a serving dish.
To make this a main dish, consider serving it with some wild rice, and some steamed fish.
