Mushroom and Tofu Salad
A very healthy, simple to prepare and delicious meal, especially good for hot summer days. Mushrooms and tofu are a wonderful mix.
Ingredients
- tofu
- walnuts
- olive oil (2 teaspoons)
- salt and pepper
- garlic (2 cloves)
- 4 small, sliced green onions
- fresh, sliced mushrooms
- lemon juice
Preparation
Cut the tofu in small cubes and season it with lemon juice, salt, and pepper.
Slice the mushrooms thinly and fry them slightly in olive oil, together with crushed garlic.
Toast the walnuts for 2 or 3 minutes. Cut them in small pieces.
Mix the mushrooms and the tofu on a large, shallow platter. Add the toasted hazelnuts and the thin onion slices.
Ready to serve!
